• Produce grown in the Chef’s Garden
• Wines from the surrounding vineyard and Dundee Hills estates
• Honey from the estate hives
• Proteins sourced from trusted local farmers

Technique is precise but restrained. Flavors are layered thoughtfully. Textures are intentional. Nothing is unnecessary.

Culinary Stewards of Anthology

 

At Anthology, the kitchen is led by Chefs Chase Williams and Zack Ehrlich, whose collaborative approach blends thoughtful technique with a deep respect for Oregon’s agricultural landscape.

Together, they craft menus that feel both comforting and quietly unexpected — dishes that echo familiar flavors while revealing something new with each course. Their cooking begins with the land itself, drawing from the abundance of small farms and growers throughout the Willamette Valley, where a vibrant network of micro-farms supplies the kitchen with ingredients shaped by Oregon’s climate and seasons.

Menus at Anthology evolve continuously, guided by what the land provides. Spring brings tender greens, herbs, and the first vegetables from the garden. Summer celebrates abundance — berries, tomatoes, and vibrant produce at their peak. Autumn highlights mushrooms, orchard fruit, and harvest flavors, while winter invites deeper, comforting dishes that reflect the quiet beauty of the valley. No two visits are ever quite the same.

Anthology takes place within the vineyards of The Four Graces, where rows of Pinot Noir and Chardonnay stretch across the rolling hills of Dundee.  Surrounded by vines, forest, and farmland, the setting allows guests to experience the landscape that shapes every dish and every glass of wine.
